At Bertucci’s, we strive to be mindful of a variety of dietary restrictions, including gluten allergies and sensitivities. As you read on, you will see some common questions regarding gluten-sensitive issues.
What gluten-sensitive foods does Bertucci’s offer?
Bertucci’s has a number of gluten-sensitive dishes on our menu. To start, we recommend you try our generous Antipasto, which features oven-roasted eggplant, peppers, artichoke hearts, tomatoes, balsamic fig drizzle, Pecorino Romano, rosemary ham, salami, stuffed green olives, and grilled prosciutto rolled around mozzarella. The gluten-sensitive Antipasto is served without grilled focaccia, but you can request our gluten sensitive cauliflower-based flatbread basket instead.
Our Artichoke dip with gluten sensitive cauliflower-based flatbread is another great choice. You might also like Bertucci’s sausage soup, which is made using a traditional Italian recipe. This popular option is topped with a bit of fresh mozzarella cheese.
Bertucci’s is best known for brick oven pizza, and we don’t want those of you who have gluten sensitivities to miss out. That’s why we offer a gluten-free, cauliflower-based crust on which you can build your own signature pizza.
For entrees, you may wish to try pan sautéed mussels– Cozze in Padella – which are delicious AND gluten sensitive if served without grilled focaccia. Grilled Chicken Marengo and Grilled Chicken Marsala. are other great options.
Our fresh, unlimited Insalata is a salad comprised of mixed leaf greens, tomatoes, cucumbers, red onion, black olives, and Pecorino Romano. It’s another excellent gluten-sensitive selection. It can be topped with your choice of grilled chicken, shrimp, salmon, or steak.
You may have noticed that many items on Bertucci’s gluten sensitive menu actually feature “core menu” specialties, which are naturally without gluten. While on our regular menu, these items may be paired with gluten-containing foods, such accompaniments can often be omitted or substituted. You will find the suggested “tweaking” of regular menu items right in the descriptions following the items on the gluten-sensitive menu. For example, the description of the Grilled Chicken Marengo on the gluten-sensitive menu ends with the wording, “Order without focaccia,” and the Caesar Salad ends with the suggestion “Order without croutons.” Presto Change-O! The solution is often easy.

Do you offer any gluten-free alcoholic beverages and desserts?
If you are looking to indulge a bit on your next night out, Bertucci’s has you covered. We offer Tito’s Handmade Vodka and Angry Orchard Hard Cider. As mentioned previously, we do our best to accommodate all dietary needs, so you should find that there is something that is perfect for you.

We cook our gluten sensitive crust on a specially designated baking sheet. The crust never touches the floor of the oven where we cook all our regular pizzas. We also cut it with color coded pizza cutter used only for gluten sensitive pizzas.
Please do understand that we are a commercial kitchen and even with our best efforts, we cannot guarantee a complete lack of cross contact with gluten, soy, dairy, or other allergens that may be used in our kitchen. We follow our process as best we can, but mistakes can happen and cross contact can occur, even without human error.
