Bertucci’s has long been committed to serving Guests the best pizza possible. We use only the freshest ingredients, and never cut corners. We spend the time necessary to create delicious, craveable authentic Italian food. Using a brick oven to bake pizza is the very best way to create consistently delicious pizzas. As you read on, you’ll come to understand why the brick oven is key to almost everything we do.
Just about every town in Italy has a brick oven pizzeria and Italians grow up cherishing the wood-fire taste. Brick ovens have been used in the Mediterranean and other parts of the world for centuries. They are built with special bricks that store the heat released by flames and then release this heat in an intense and consistent way.
The brick ovens that are the heart of every Bertucci’s are inspired by ancient technology!
A pizza in a brick oven is fed right onto the hot bricks. This floor of the oven contains “bottom heat” and it cooks the crust evenly. The “top” heat is created by the embers and flames. It is this heat that gives the crust and any toppings a golden brown finish.
Pizzas Cook More Evenly
Brick ovens, which are typically heated by wood fires, get hot evenly and hold heat extremely well. In conventional ovens, some spots are usually markedly warmer than others. Furthermore, because brick ovens are continually warmed by flames throughout the baking process, pizzas are able to cook evenly, so no areas end up more cooked than others.
Pizzas Cook Faster
Because brick ovens are very dense, and it is difficult for heat to escape, pizzas cook quite quickly; there is virtually no wait time between taking one pizza out and putting the next one in. This is good for both restaurants and guests! Our quick service is just one of the reasons clients love Bertucci’s, but what they often don’t know is that they can thank our brick ovens for our speed. Faster cooking “locks” in the flavors without drying the pizza. The result is a delicate balance between crispy and juicy toppings.
Pizzas are Crispier
The radiant heat emitted on the inside of brick ovens causes pizzas to become crispy quickly, eliminating excess moisture in the dough. This isn’t the case in conventional ovens, where certain portions of the crust may become soggy and limp. Bertucci’s believes that brick oven baked pizza crust is the best there is, so it’s what we serve our customers every single day.
Pizzas Have a One-of-a-Kind Taste
Brick oven pizzas have a flavor that simply can’t be replicated via any other baking method. Their smoky taste is strictly a byproduct of how they are made. This is one of the things that truly sets brick oven pizzas apart from any other baked products. The entire Bertucci’s team is passionate about our craft. Our pizzas are an art form to us, and we take great pride in delivering quality meals to families day after day, year after year, and generation after generation. We look forward to serving you and yours soon!
